(Aunt Dar’s Famous Taco Salad, Sensational Sloppy Joes, Coke & Bret’s Potluck Pistachio Salad, Sweet & Tart Apple Snickers Salad, Classic Three Bean Salad, Sausage Breakfast Egg Bake)
Aunt Dar’s taco salad has been a favorite of mine since I was a kid. I especially loved it when the salad and dressing were all mixed up in the great big Tupperware bowl. Leftovers don’t keep as well if you do that, so the dressing is often served on the side. I am fully capable of mixing my own personal salad. It’s a pretty simple recipe, so it must be all that extra love she adds to make it so delicious.
1 lb hamburger
1 head of lettuce
1 large onion
2 large tomatoes
1 pkg taco seasoning mix
1 can drained red kidney beans
8 oz shredded cheddar cheese
Thousand Island dressing
Nacho Cheese Doritos chips (crushed a little)
Brown hamburger, drain grease, add taco seasoning with amount of water as per package instructions. Simmer until well mixed & moisture soaked in some. Let it cool down.
Chop lettuce, onion, and tomato.
Mix lettuce, kidney beans, hamburger, onion, and tomato in a large bowl. Right before serving add cheese and taco chips. Top with dressing on your plate.
Now enjoy with all your friends and relatives.
Sensational Sloppy Joes
1 onion, chopped
2 lbs ground beef
2 TBSP ketchup
1 TBSP mustard
1 can chicken gumbo soup
Brown onion and beef in a skillet until the onion is tender and the beef is cooked. Stir in the remaining ingredients. Simmer for 20 minutes, stirring occasionally. Serve on buns.
Coke & Bret’s Potluck Pistachio Salad
Two 3.4 oz pkgs pistachio flavor instant pudding
Two 20 oz cans crushed pineapple, undrained
10 oz package mini marshmallows
One 16 oz container Cool Whip
Mix the pudding and pineapple together. Then add Cool Whip and marshmallows. Mix well.
Sweet & Tart Apple Snickers Salad
3-4 Granny Smith apples, chunked
5-6 full-size Snickers bars, chunked
12 oz Cool Whip
Stir all the ingredients together. Adjust the quantities to suit your taste.
Classic Three Bean Salad
15 oz can yellow wax beans
15 oz can red kidney beans
15 oz can green beans
Large white onion, cut into rings
1/2 cup salad oil
1/2 cup white vinegar
1/2 cup sugar
1 tsp salt
1 tsp pepper
Drain the beans well, and then mix with the onion rings. Combine oil, vinegar, sugar, salt, and pepper. Pour over bean mixture. Marinate in refrigerator over night.
Sausage Breakfast Egg Bake
8 slices of bread, toasted and cubed
2 cups shredded cheddar cheese
1 pound sausage browned and drained
4 eggs beaten with 2 cups of milk and 3/4 tsp dry mustard (I didn’t use dry mustard and didn’t miss it)
1 can cream of mushroom soup mixed with 1/2 cup milk
Place the bread cubes in a sprayed 9 x 13 baking pan. Sprinkle the cheese over the bread. Place the sausage over the cheese. Pour the egg mixture over all. Refrigerate over night. Before baking, spread the mushroom soup mixture over all. Bake at 300 degrees for 1 1/2 hours. Let it set before serving (takes about 15 minutes).
