Sole Food

(The Queen’s Royally Healthy Soup, Coco-fied Oatmeal)

THE QUEEN’S ROYALLY HEALTHY SOUP
 
2 TBSP. olive oil
2 large onions, thinly sliced
1 ½ lbs. diced chicken breast
1 large carrot, finely shredded
2 large garlic cloves, minced
1 jalapeno pepper with seeds, minced
2 tsp. minced fresh thyme (or 1 tsp. dried thyme)
8 cups chicken broth
1 (15 oz.) can black beans, drained
6 cups packed fresh baby spinach leaves
1 large tomato, finely diced
Salt and pepper to taste
Grated Parmesan
 
Heat oil in large stockpot over medium heat. Add onions, stirring occasionally, for 10 minutes. Add chicken, stirring occasionally, for 5 minutes more, or until chicken is cooked through and onions are lightly browned. Add carrot, garlic, jalapeno and thyme; cook another 2 minutes. Stir in broth and increase heat to high. Bring to a boil. Add beans, spinach and tomato. Bring back to boil, then turn off heat. Add salt and pepper. Sprinkle each serving with grated Parmesan, if desired.

 

 

Tomato Paced is a confessed sugar addict.  She knows oatmeal is a great source of nutrition, but by the time she gets it palatable, she has a little oatmeal in her bowl of brown sugar.  Coming up with a new way to prepare her oatmeal, Tomato Paced has found a way to increase the protein content and reduce the amount of sugar she adds while making it taste better.

1 egg

2/3 cup milk

granulated sugar

cocoa powder

pinch of salt

1/2 cup old fashioned oats

craisins

In a decent sized microwavable bowl, whisk the egg.  Whisk in the milk.  Add sugar, cocoa powder and a pinch of salt.  I take a regular spoon and heap it with cocoa powder.  I do the same with the sugar and sometimes even add a little more sugar since I like it sweet.  It’s really to taste and dietary preference.  Mix in the old fashioned oats.  The cocoa powder doesn’t really mix in that well until you add the oats.  Microwave for 2 minutes.  Stir in some craisins and enjoy.

*I typically use a 1 qt Pyrex round container.  You want to have enough room to allow for it bubbling up while cooking.  Obviously the less sugar you use, the healthier it is.

    I find that peanut butter makes oatmeal palatable with or without sugar, however, chocolate improves anything.

    Oh my! Chocolate oatmeal! Chocolate lovers will love this! Are you going to work on chocolate rice next? I’m not surprised you could come up with new chocolate recipes. Fantastic idea for breakfast!
