One of my greatest discoveries made while living in Texas is the availability of homemade tortillas. All it takes is a simple trip to the grocery store and you have fresh, hot tortillas ready to enjoy. And let me tell you, they are amazing. The prepackaged papyrus rounds passed off as tortillas don’t hold a candle to those freshly made in store.
Enchiladas have been sounding good lately, so while I was at H-E-B yesterday I picked up a package of fresh flour tortillas. Personally, I’m not a fan of corn tortillas which are traditionally used when making enchiladas. Since I actually took the time to prepare a proper meal, Sid missed his usual time outside. I think he was rather disappointed, and I did feel bad for him. I, on the other hand, was not disappointed with my enchiladas hot out of the oven. Not only did I use fresh tortillas, but I also made my own homemade Enchilada Sauce. You can find my Enchilada Sauce recipe, which uses items you most likely already have in your pantry, on the In a Pinch page of the main Recipes section.

The Impossible Has Been Found!!!
I couldn’t believe my eyes! H-E-B now has a feature display highlighting my elusive key lime juice! If you recall, I looked all over unsuccessfully for key lime juice when I wanted to make Bret’s Key Lime Pie and ended up squeezing 18 tiny key limes by hand. (I have since received a tip that it can be found in the mixer aisle at Spec’s.) Perhaps a key lime pie with the “secret ingredients” may be in my near future!
My grand discovery came after I worked laboriously outside this morning. Wasps still ruled the bushes, so I carefully raked out the fallen limbs the best I could without getting stung again. I then proceeded to mow the front yard. Overall, I think I’ve made some significant progress. I’d hoped to add mulch around the bushes, but I miscalculated the end date of Home Depot’s mulch sale, so that project will have to wait. Besides, I have wasps to exterminate before I do any more work in that area!

Good Intentions Gone Wrong…
My front bushes experienced significant growth after the last round of rains and had become a bit unkempt. So this morning I put on long pants, a t-shirt, and garden gloves to face the heat and conquer the unruly bushes. Sid stood by inside in his typical supervisory role.
I was making progress when I felt a sharp pain in my side. It felt as though I’d been pierced by a needle. I soon realized it was a big wasp who had stung me in the gut. OUCH!
I came inside in a great deal of pain, washed the area, and began to ice the sting. Mixing baking soda with a little water, I created a concoction to hopefully sooth the wound. I took Benadryl and knew I’d be sleepy in a short amount of time so I went back out to try to finish trimming and clean up the brush. Not wanting to be left out this time, Sid pushed his way outside with me. As I attempted to even out the bushes, I must have disrupted the actual nest and the vicious flying insects swarmed everywhere. I sprayed the bush with wasp spray and coaxed Sid and myself into the house. At this point, my bushes aren’t completely trimmed, and I left a mess.
So while I awoke with good intentions today, they were quickly thwarted in one painful moment. The Benadryl wiped me out for the day and the sting itself just plain stung. I am not allergic to stings, but I am quite sensitive to them. Here’s hoping for a better day tomorrow!

Lazy Saturday Morning
I haven’t been sleeping that well lately so I ended up sleeping in this morning. The weatherman said last night to expect rain around noon today. That meant I needed to hustle up if I was going to string trim the backyard, trim the front bushes, mow the front yard…my outdoor chore list piles up when it’s hot. Much to my delight, the rain came early. So adorned in my big furry robe and ruffled up hair, I went to bug Sid who was already on to his mid morning nap after sleeping in late. Once his nap was completely disturbed, I decided to make a batch of Cinnamon Raisin Biscuits Supreme. These delicious reminders of my childhood were a yummy treat on this lazy Saturday morning. Soles with Goals: Coach’s Weekly Progress Report Now Available!
My younger brother always has the privilege of being my shuttle bus driver to church when we’re both back visiting our parents. Mom and Dad usually make the 40 mile trek early, and Bret and I head down later. It’s no secret I’m not a morning person, and a dear friend of mine once gave me a framed saying I absolutely love, “Punctuality is a virtue of the bored.” While I don’t think my chauffeur enjoys running late, I know deep down he finds the humor in seeing what state I’m in minutes before it’s time to leave.

Ok, so we were a few minutes late. It didn’t help that there was road construction, we were rerouted, and got behind an extremely slow moving old pickup truck complete with camper and a dog hanging out the window. If that hadn’t happened, I think we’d have been right on time. I had actually gotten up in plenty of time to be ready. I was simply a sucker for a big cup of coffee and Mom’s homemade cinnamon rolls the moment I crawled out of bed. Apparently I enjoyed them a bit too much at leisure.
